– One tablespoon of olive oil

– One cup of chopped onion

– Two cloves of minced garlic

– One pound of mushrooms, chopped

– Three cups of cooked diced potatoes

– One 15 ounce can of corn, drained

– One 15 ounce can of peas, drained

– One teaspoon of dried thyme

– ½ cup of vegetable broth

– Salt and pepper to taste


To make the filling, heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened. Then, add the mushrooms and cook for about five minutes.
